During seed drying, oleosides may have a structural role in stabilizing liposomes by preventing the aggregation of oils. May interact with the lipid and phospholipid parts of liposomes. It may also provide identification signals for specific lipase anchoring during seedling growth. Oil red also improves the overwintering vigor of oilseeds by preventing abnormal oil body fusion during spring imbibition. Cell location: oil body surface.
