Aflatoxins are naturally occurring mycotoxins produced by many species of Aspergillus. Aflatoxins are toxic and one of the most carcinogenic substances known. Crops frequently affected by Aspergillosis include grains (corn, sorghum, pearl millet, rice, wheat), oilseeds (peanuts, soybeans, sunflowers, cotton), spices (chili, black pepper, coriander, turmeric, ginger), and tree nuts (almonds, pistachios, walnuts, coconuts, Brazil nuts).
